Ingredients
1 lb Sierra Mackerel cut into ½ in. cubes
Juice of 6 limes
1 cup diced fresh tomato
1 red bell pepper, chopped
2 jalapeno peppers, chopped
4 tablespoons chopped cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium red onion, finely chopped
Marinate fish in the lime juice in the refrigerator 4-6 hours turning frequently.
Pour off most of the lime juice
Add remaining ingredients
Refrigerate 1-2 additional hours.
